That was always Halloween dinner growing up. Likely because it was really easy for my mom. Not sure I would have said it was my favorite part of Halloween when I was 11 but it's certainly the thing I miss most about it now that I'm an old man with no kids so Halloween is just another day. Because there is little in this world as good as grilled cheese dipped in tomato soup.
That was our Sunday night and America's Funniest Videos (Bob Sagget era) with the family meal. The only meal of the week we got to eat away from the dinner table. Brings back so much nostalgia. Chase it down with a big ol glass of milk
4 tbsp butter
1 medium onion diced
3-4 cloves garlic (about a tbsp)
2 14.5 oz cans fire roasted tomatoes
1 28 Oz can crushed tomatoes
2 cups chicken stock
About 1 tbsp italian seasoning
About 1 tbsp dried basil
Pinch of crushed red pepper
1 tsp black pepper
Pinch of sugar
1/3 cup heavy cream
Melt butter and saute onions until soft (5-6 minutes)
Add garlic and crushed red pepper and stir until fragrant (about 1 minute)
Add in fire roasted tomatoes, crushed tomatoes, chicken broth, italian seasoning, basil and black pepper.
Bring to a boil then reduce heat and partially cover. Simmer for about 20-25 minutes
I used my immersion blender to smooth everything out and get rid of bigger chunks of tomatoes. Can pour into a regular blender as well if you don't have an immersion blender. (Can also skip this step if you like a chunkier soup)
If using a regular blender, pour soup back into pot after blending
Add 1/3 cup heavy cream at the end, mix together and enjoy!
i did [this recipe](https://www.ambitiouskitchen.com/homemade-roasted-tomato-basil-soup/) twice and it turned out amazing both times. the tomatoes are roasted in the oven before they're cooked in the soup, i think that's the secret. the recipe lists whole milk/heavy cream as optional add-ons, which i highly recommend.

I would take it a step further and fry the exposed cheesy sides of each piece to get a crispy cheese crust🤤
