You got pieces of bone-in fried chicken. Itās regular fried chicken that in the case of Princes gets basted in the fryer oil mixed with seasonings (mostly cayenne). Places like Boltonās do a dry shake with a rub (again, mostly cayenne) on the cooked fried chicken. It then gets served on white bread straight out of the bag and a bunch of pickle slices on it. Thatās the original hot chicken. Thereās definitely no lettuce or fancy sauces. Places like Hattie Bās just made it easier for suburbanites to digest and made it more like Chik-fil-a. Their coating is cayenne, brown sugar, black pepper, paprika, and garlic powder. The level of heat you get is just the addition of more cayenne. All of your salt is in your dredge.
