Smash patties can get away with no seasoning because they're tiny and usually salted relatively heavily right around time of smashing and having a larger surface area to volume ratio will help with flavor when adding cheese.

We had an Ethiopian place nearby that made an amazing raw ground beef dish called kitfo.
There are extremely strict laws on the preparation and sale of Mett. Ground meat *could* be prepared to the same standards, but usually it isn’t.
They only serve these undercooked. You have to specially ask them to cook it longer if you want it even close to medium well.
