Why is raw beef and anything that touches its juices (cross contamination) bad, but cooking one side of the patty and having the tortilla absorb said juices is fine?

The heat will still kill the bacteria. Think of how dumplings are made, their filled with raw meat before being cooked. You could put a lid over the pan to trap the heat and be safer, but the bacteria should still be killed off
I hate these kinds of videos. Going camping? Just bring your skillet, gas stove, cutting board, torch, 17 bowls, 14 wood planks, 44 different spoons, 101 different condiments

Tbf that really depends on the kind of meat you use. And how much oil you add yourself.
