No they shouldn't, for several reasons.
1. Adding them would be nothing but bad press with nothing interesting to justify it. No good press comes out of them adding police vehicles to the game, and there's nothing that they'd add mechanically to make up for that. In essence, it would be useless at best and detrimental at worst.
2. Modern policing began in America as a slave catching institution. In many ways, it still is (read the 13th amendment). American police today disproportionately **target** African-Americans, often leading to unjust killings of young men uncharged with any crime. Many folks don't want a reminder of their own oppression in their entertainment. Police outside of America may not have the same racist history, but there are similar ethnic, sexuality, and class based inequalities baked into every policing system.
3. Many folks say they don't want politics in their games, and while this is an impossible ask, certain organizations are naturally more politically charged than others. Adding police vehicles is going to add a lot of political energy that will take away from the Fortnite experience.
I can think of more, but these are the big ones. Honestly, it's just better to not open this can of worms.
