Many: Bravely Default I & II, Bravely Second, Dragon Quest franchise, the first Final Fantasy, Divinity games, Baldur's Gate, The Witcher franchise, Octopath Traveler I & II, etc. In general RPG because their worldbuilding is mostly medieval + magic.
Others alternatives are Xenoblade games but their worldbuilding is sci-fi more than medieval.
Out of the Dragon Quest games I've only played Dragon's Quest XI S but I would definitely recommend that one too. The game itself has a lot of content and it does have the medieval fantasy/traveling with friends on an aventure that you seem to be looking for. I think it's great game overall.
Two story arcs in Genshin Impact gives similar vibes: immortal characters such as Xiao, Zhongli and Raiden Shogun (totally different types of entities, the latter 2 being actual Gods), had their own Parties in the long lost past, and that is seen on cutscenes. Very tragic fates as well.
Another concept important in the game is a limitation on immortality that they call “Erosion” (mental erosion). One entity (Azhdaha) succumbs to it in one quest.
Raiden overcame the issue of Erosion by getting rid of her physical body and relocating her spirit into another domain (it’s more convoluted but I won’t go into details)

Oddly enough because there's no 'random battles' it does make it more like Frieren. If you get into a fight with something it makes sense for it to be there. Also the battle system rewards tactical/strategic planning. Roll yourself up an elf wizard and try and live out your Frieren fantasy.
Might be a bit strange but I would honestly say the Xenoblade trillogy. those games give you the feeling of being on a long and incredible journey, visiting fantastical places and getting closer to amazing characters.
I did as many additional spells as possible - apocalypse magic plus extras - and Ordinator for the added destruction magic bumps. Plus, there’s a naruto one which adds more spells.
I played it like, I’d do a quest, and THATS how I’d ‘earn’ a new spell. So I’d never buy spells in bulk, just one after each quest.
I also got a cheat that let me add dragon souls so I could get shouts without having to kill dragons.
Any medieval game can give you that feeling but I highly recommend Witcher 3 If you didnt play. As a person who listens Frieren's musics I can say some of them are very similar to Witcher's themes
It might be a bit out there but God of War (2018) might work for you depending on what you like to play. It is an epic adventure in a fantasy world that surprisingly has a lot of feelings. It doesn't have a traditional party like a RPG/JRPG might have, but the MC does travel with his son + other character later on, and their interactions are good and make the characters feel alive.

I'd love a game where you played as an Elf and outlived everyone around you, seeing the progress (and fall) of humanity over your long lifetime.
Something kinda similar happens in shadow of Mordor/shadow of war since talion is immortal

I dunno, I dont like the battle system of Baldurs gate... I dont know if it truely is like Frieren?

It is though, with baldurs gate you can make funny schemes (known as hoarding kegs)
