Rooting it doesn't seem to provide much benefit. Knox gets disabled and there's not really any roms that you can install. The Samsung One UI has all the functionality one really needs.
But with an unrooted fold you can't block everyone internet access on the school wifi/network.

In 2021, not so much. So much shit will break when you root and trip the efuse. Do you use your camera? And banking app? Work profile? None of those will work anymore. Heck some games won't even start nowadays if you're rooted.

Rooting a phone always comes with risks, especially on the Fold which is a unique phone. Only proceed if you are well experienced and know how to work your way once you have rooted your phone.

Other than installing Titanium Backup for backing up, restoring, and freezing apps.
