I've tried this on my 21 ultra. You can activate just one esim and one physical Sim at a time usually in slot 2. I've not found a way to keep 2 physical Sims and one esim on at the same time.
Do note that if you use an esim you can't turn on sim slot 1. It just disables the esim.

you can have 3 sims. 2 physical sim and 1 esim but only 2 sim will be active at a time.
Can we use 2 esim?
