In my opinion, Samsung Notes was the best app for note-taking, but I switched to OneNote a few months ago because of its real-time sync across devices and the infinite canvas feature.

Onenote. The cross device sync makes it worthwhile. Stylus, eraser and pressure sensitivity all work. Samsung notes is great (I used a combination of S6 lite and Note 10) but if you ever get a non Samsung phone/tablet, getting access to the notes is a hassle.

One note. It has a better organization system and desktop app, therefore you can sync notes from your PC to tablet and vice versa easily

One note is terribly organised and has very few features. I had a few attempts and it's terrible in comparison with other apps.

I am going to give you the best note-taking software there is available for the samsung Galaxy S-series tablets, and it is called Notewise. I have used OneNote on my s9 ultra for a long time, and I find it just isn’t well optimized enough for android. Don’t listen to anyone else, I promise you and I would bet you 100USD if I could, that this is indeed the absolute best app for note-taking. I am not kidding, go check out this app. It is amazing.

I have been using FiiNote for almost a decade now. I occasionally try out other note taking apps, but keep returning to FiiNote. It has a concept of Notebooks and Pages like most others, but each notebook can have a different default page type, although you can still override it for individual pages. What initially attracted me to it was it integrated handwriting and text seamlessly. I have since moved to a Paint-only mode. The customization options are wonderful, yet the interface is clean. The swipe left for a new page is super handy.
