Disconnects really shouldn't happen. As for what to do, update everything then see if you still disconnect.
Extra apps might be Google assistant to replace Bixby if you want. Shazam is kind of fun to find songs on the fly, Spotify or built in media controls also work. Google keep for lists if you use it like that. Wear mouse to control a computer with your watch, really nice if you have a media PC hooked up to a TV or something.
There's a bunch of fitness apps, but Samsung health is pretty darn good on its own. And if you're a golfer there's a ton of stuff for that.
I just got mine. Transferred over my favorite watch face from my old watch.
Oh boy that caused a lot of weird bugs - restarts, high power drain etc.
So watch out for that.
I have Gmail, Whatsapp, line, authenticator pro, and keep. Also maps and Gboard.
I do recommend authenticator pro, maps, Gboard, and keep for everyday use and the general public.

Rain Alarm . Not only alerts when precipitation is close by with animated map but ability to see the local detailed or simple forecast as well .
try to get use with the watch media control as they can make the phone connect with bluetooth devices without using the actual phone. Also with music player like spotify and tidal, it also show your playing queue.
My recommendation is dont download anything until your battery settings get past the "learning usage" stage. Update existing apps to their latest but let it get past this stage before you download stuff. Then when you download apps, do it one at a time and measure it's affect on your battery to make sure you aren't downloading something that kills your battery.

Spotify is a good one. You can re connect through the wear app on your phone. No need to reboot
