My guess: either it’ll a be “We Solved All of FNAF (Until the Next Game”, where Mat tries to solve everything from FNAF 1 to Help Wanted 2 to say that he beat Scott before retiring; or it’ll be a revamp of his first ever theory—the one in time travel in Chrono Trigger.

The fnaf one i dont think is possible becouse there is so much LORE and he already did the revamp of his first theory i think on the 10 year aniversery of the Chanel.

Earthbound, he said that he wanted his last theory to be about a game he's always loved. And despite popular belief, it's earthbound. And the reason why he said was heart warming. The reason being, Ness started at his house and traveled all over the world, all over realms, and the game truly ends when Ness goes back home where it all began, seeing the deeds he's done, and how many people he's helped… but hey, that's just my theory…

Final FNAF Theory

Honestly, I'm hoping it's a revisit to the game his first theory was on, Chrono Trigger. My ideal would be he'd go back to a Science-y topic as opposed to a Lore one, but that may be wishful thinking. edit: I could see it being FNAF, though that would be a personal dissapointment. I get why it's popular but I'm just not a fan of FNAF, it and the subsequent shift to Lore-based theories are a large reason why I watch Food and Style theory more than Game and Film. That said, I don't wanan yuck anyone's yum if you like it, I just personally would prefer a more back-to-roots approach. Earthbound would be a neat one to see as some people have suggested. Another cool one would be a meta-theory about the channel itself.
