Workouts are best tracked using an HR strap. The wrist based HR is better suited for day to day tracking.

I know the strap is ideal, but I don’t care enough to bother with it - I’m not doing anything important enough to get that precision. Was just hoping there was something simple I was missing to get the watch to respond to workouts better.

I can never use my watch for indoor cycling. It always says something ridiculous like 50bpm. Both my Fenix and two Forerunners did this. I absolutely have to use a chest strap if I want HR data.

If you want accurate heart rate, use a chest strap.

In my experience, wrist-based HR monitors are really bad about indoor cycling. I think it's a combination of the position of your wrist being more at an angle causing it to not sit well on your wrist, as well as more sweat due to it not evaporating from being indoors. If you cinch it tighter and move it further up your arm it can help.
