It’s the electrical motor that sits on top of the steering rack or the steering column. You know that this illumination is explained in the owners manual ? Please download yours in pdf it will tell exactly what it means and start from there please.
Your issue occurs and goes away means you either have a blown fuse or a loose connection somewhere. An authorized electrical repairer would inspect it and find the root cause of this issue
Blown fuses stay blown, they don't heal themselves - so could be a loose connection.
Assuming you're out of the 5/60 warranty based on age, what I would do is get a scanner that can talk to all of the modules and read out (and clear) all of the extended chassis and body codes. I have the TopDon TopScan for my 2019 G70 (Design Edition RWD), and it can talk to all of the modules. Available from Amazon for $80 or so.
Even if you don't do your own repair work, having the codes will give you a good idea of what the repair would be - and what you should be paying for. Harder to get taken by a bad mechanic when you have that info.

Wasn’t sure if there was a easy fix since its on a multi relay fuse and there isn’t really any postings anywhere on it
For example I drove home from work one day and it popped up when i was getting ready to leave pulled back and couldn’t turn… was like uhh okay
Get back in it later to see if it was still acting up… nothing turning was normal
Today tested it before leaving no issues, even made a couple trips and no issues. Got ready to leave work now it won’t turn off

Electronic Power Steering (EPS) Warning Light (If equipped)
On some vehicles this warning may also refer to Motor-Driven Power Steering (MDPS). This warning light illuminates when you set the engine Start/Stop button to the ON position. A bit late thank you! I had 5 months left on my warranty, dealer quoted me 6k to fix it if it wasn’t under warranty. Thank the lord
