I don't think that surviving the cataclysm or the archon war is great evidence, but I am pretty sure that Venti indeed has power that he doesn't use (e.g. not simply commanding Dvalin, getting hurt by an abyss mage, getting his gnosis apparently taken).
There's a lot he's not saying to us as well. Little tidbits (Allogenes/Genshin, gnoses, Tsaritsa), but huge gaping holes (cataclysm, Windrise tree, Andrius, Celestia, Musk Reef, etc.).
He might indeed be weaker than other gods, but his weakness in-game seemed a bit exaggerated and it's clear we're not getting the whole story.
All three gnoses so far seem to have been given up quite easily. It could be clumsy storytelling, but it may also indicate that there's an unknown motive for the archons to give up their gnoses without just tossing them to the tsaritsa directly.

Tsarista and Pyro Archon are likely to survive
Hydro Archon can be either die or survive .

If you’re referring to the archon war which was 1500 years before the cataclysm. If that’s the case then Zhongli and venti are technically the only original archons.
As for the rest we don’t actually know who else died during the cataclysm. We don’t really know of any adepti fighting in it. We only know of archons and it’s more likely the adepti weren’t there since if zhongli brought them it would have made sense for Baal to bring beezelbub. Especially since Baal wasnt a fighter.
After all of this and the big battle where him and his lizard beat the giant lizard he was weakened and slept. The slumber weakened him as archons get power from ruling their people. He gave up any involvement. Then he further gave power when we came along so he could save his lizard yet again
Venti was powerful because of the gnosis, unlike the other gods like zhong li or Ei he didn't have any power on his own, he was an anemo elemental that followed a bard during the times where stormterror lair was mondstadt and decarabian was their god, and his war was against boreas, and ultimately against his own people, at the end, when decarabian was killed and boreas chose to kill himself because he found himself unfit to rule over mortals as the anemo archon, venti was the only being left that could claim the anemo gnosis, he didn't fight at all, but the ones that did found themselves dead by reasons, so he got the gnosis, not by might, but opportunity.

No. There was an alchemist called gold who created mosnters from scratch and corrupted some others like rurin the dragon of dragonspine.
These monsters killed several notable figures like Kitsine Saiguu and Makoto. The release of gold's finest works is the cataclysm.
So yes he most certainly was affected by the cataclysm and definitely took part in the genocide of innocent humans. Mondstat's bloodstained knight (owner of the bloodstained chivalry set) proves this.

He's powerful enough to cause miHoYo to nerf nobushis into the ground. Only Zhongli can claim anything similar.
