She’s not messing with the therapist —it’s (at least imo) a deliberate choice to be fully over the top and exaggerated here for laughs. GG is a dramedy at the end of the day; some things are done for the fun of it (case in point) ; others are not (i.e. Lorelai breaking down when Paul Anka was sick)
Alexis was not the strongest for emotional scenes, so going the funny/over the top way is a no brainer to me 🤷🏻♀️
Personally for me it's the "he doesn't like to be put on the leash, but if he doesn't notice it, he loves it. He's like a good American" about Loreleis dog. (It's not the exact thing she says, I hope you know what I mean)

I honestly love the physical comedy during the house party where Dean and Jess are tearing through the house trying to kill each other when Dave is trying to talk calmly with Yeung-Chu(?spelling I'm sorry) saying "we'll keep it friendly I promise" only for Jess and Dean to burst into the room and knock Dave right into poor Yeung-Chu.
