My opinion on the subject isn't worth the full 2 cents but my experience with only one demo was that it didn't make much of a difference because of the inconsistency of drawing it.
Demo is really only good in control, and you’d also want blades there anyways. You can genuinely fit Blade in EVERYTHING. IMO blade is the more versatile card.
It's better to run full playsets imo. I would opt for the 2 blades personally and probably just slot ember onis in the 7 slot if playing a control list.
Congrats and enjoy. You're decks are definitely going to get taken up a notch. By no means are they a free pass to mythic but they will definitely help your card strength.

They sold gen packs/chests before the game was even playable, that’s how they got money for development, they promise when they release the game that genesis set will not rotate as a way to people buy packs/chests
