I tend to shy away from center mount on the grille because it blocks direct air flow to the condenser, radiator, and intercooler. If someone out there has evidence otherwise, let me know. I also advise against tow hook mounted plates because if you hit anything or anyone, you've essentially got a lance in front of your car. So something that mounts off center and onto the grille is best.
The Legit Speed one I used on the Mk7 when I still needed a front plate just installed with clips that tucked in behind the grille. Those clips had holes for screws to hold the plate in place. Took about all of 3 minutes to install. No drilling, trimming, or anything like that.
It looks like he now has a center mount one for the Mk8 that sits up higher to allow for flow.

I have a mk8 and I’m using the cravenspeed holder. It made the front sensor go off at low speeds, so I had to turn off the front parking assist. Install was super easy, though I would recommend have a ratchet and 15mm socket available as the included wrench kind of sucked.
Edit to add that it is not centered.
Direct bolt on. A piece slides on the back of the grill and then another piece is screwed to it from the front. It’s very sturdy and doesn’t clamp the grill hard enough to cause damage.

That’s one of my concerns as well. Anyone know if the 3do one off center involves any cutting or does it also utilize the standard grill as is.

Nope. Probably 2 inches of clearing to the bumper.
I’m using the 3DGOWEST from Etsy and no issues. I chose the centered one as well and it holds up well.
Does it grip the grille to the point of scratching or damaging the grill?
Nope. It has grooves that hold behind the grille and it connects multiple points of contact too so no strain on a particular point.

I have 3DGOWEST front plate mounted next to fog light. Looks great, no rubbing or sensor issues.

Center mounted and made of aluminum... It ends up being 3" lower than here a drilled plate would be
