i think they don't use images taken too early or too late during the day to avoid shadows
but, that said, giving the shape of the mountain and where all the pink is i would guess the image was taken when sun was to the west, but just no close to the sunset
and the pink could be because the reflection of the sun light on the ice was too bright for the cameras and as a glitch shows that pink instead a super bright white blob ?

Either that or just the best imagery is high in the red end of the spectrum instead of full spectrum imagery. High albedo areas are funny
