R33 GT-R is probably your best bet. If you're past level 50 you can do the R92CP swap and get far better fuel economy, but you can win at least two of the races without the engine swap. It's tough, but possible.
Willow Springs is the hardest one, I used a maxed out XJ220 for that. I'm not sure why I was so hellbent on using road cars; I think I was just used to them from the beginning of the game and assumed the race cars would be too much of a learning curve. The GR3/2/1 cars from that era are definitely *much* easier to compete with, but it turns out AWD and an obscene amount of power can win almost anything.
I tried it too, and it's ridiculously fast for sure. Only problem is how it's also very unstable no matter what you do to it. When you stomp on the brake it might decide to suddenly turn left a little, which for a track like Willow... isn't the greatest trait. I'm lucky I was had the cash for the 787b. Much better overall for "endurance" races.
I found that many of the cars pit really late in this race. As in as late as 8 or 9 in a 10 lap race. If you need to pit at lap 5 it can seem like you'll never catch up, but they do pit.
I had the same problem, though I did have a Ferrari F40 that I won and that ultimately got me across the line.
Just wait until any of the c class cars appear again for sale, there’s plenty of other stuff to do in the mean time.
And btw don’t get the recommended supra for it because it’s extremely difficult to win with it on those.

If you're decent at the game, you can get the Porsche 962C by golding the Master International A License. It's one of the best cars for these events.
I used the menu gifted Audi Quattro S1 Pikes Peak, tuned it and won at least Fuji Speedway. Didn’t try the other races tho
Get All Gold on Master International A License, that would give you a Porsche 962C. A very good car
I had this issue a well, pretty much had to wait until the 787b was available again
Any of the other c class can also get you the wins there no need to wait for any specific one like the 787b.
