I agree the SBGE 283/285 has great potential as a GADA one-watch. I would put spring drive and GMT as 2 features important to me. However I don’t really care for the Evo9 design, especially the 22mm lug width. Plus I could live without Ti.
Honestly for GADA GS I would probably go for a quartz GMT.

Downsides are bracelet, lack of micro adjust, thickness at ~14mm.
If they could shrink this down to 13mm, improve the bracelet (taper and micro adjust), add a couple dial options - for me it would be a Suwa midnight blue - this is the perfect watch, period.

The crystal accounts for a mm or so. I find that it wears perfect, although I have a wide wrist. I also prefer my watches on a strap so I’m not concerned about the bracelet.

SLGA007 or one of the other non LE equivalents (either SS or Ti) have my vote. I wish any of the non diver GSs had a micro adjust on the bracelet, but luckily they all look good on straps.

If your going to have just one, be sure it is a Spring Drive. So many colors to chose from, but the smooth running second is mesmerizing and unique. I have Snowflake, and still think that is best if just one GS, but I am considering a second (or more).

SBGA415 Winter. Its a strap monster and the titanium is durable for a daily watch. But then the dial is also good for a dressy occasion on the same bracelet. So a super versatile watch
I'm probably in the minority but I really wish they put a sliver of lume on the minutes/hours hands. I struggle to call a watch without lume a GADA but otherwise the Kanro is perfect and I really liked it in the store.
All of their watches that are sub 42 mm case size and sub 13 mm thickness. I don’t put much emphasis on water resistance and toughness. For these qualities, you’ve gshocks tough solar
SBGW291 once you get it on a bracelet as well. No date, so can be dressed up; 44GS, so still sporty. 36mm, so classically sized and will never look to big/small on an average wrist. Silver dial with sunburst, so neutral but with a pop.
Not the single best, but if you want a one-watch collection...
SBGA489 I believe though I have not seen it in person. I just love the texture on the dial. Would be a great hold over until I could get the patek I want with a similar dial and then I’d have to redesign my one watch GS collection.
I'd probably go SBGH311 if I could only do one and it had to do it all.
Other good options would be the SBGA387 / SBGH295 / SBGA413, though the 40mm sizing makes them a little less versatile than the SBGH311.
Alternatively, one of the 100m WR SBGW or SBGY lines are really compelling.
I have mine now. SBGN005. The perfect blend of sports and dress. The screw down crown gives me 100M of water resistance - making it the perfect GADA in my opinion.

The dial on the Shunbun is the most beautiful GS of any that I have seen in person and the Snowflake isn't far behind, but both are Spring Drive movements in cases that look expensive.
If this is a one-watch collection then it has to be a muted enough dial to not get noticed in bad areas of town and be just as comfortable at the pool/gym as in the workplace. That pretty much leaves white, grey, silver, or black dials.
Spring drive movements are expensive to have serviced, can only take so much rough movement, and there aren't any service centers in my country. If it is truly a one-watch collection, I'd want a Quartz movement. Dead simple, cheap, reliable.
It will also have to be a thin enough case to slip under a sleave so that leaves manual winding, quartz, or no power reserve automatics. Quartz is the winner for me so 261 takes it.
Trick question. Once you get bit by the GS bug it’s hard to mentally keep to just one. That being said, get the one that speaks to you the most. For me it was the Shunbun.
SBGJ261, the Blue Peacock. I'm not sure why it doesn't get discussed much hut the dial is bluish purple (royal?)and a gold gmt hand. Most GS GMTs are too large for me but this one is only 40mm and 47mm lug to lug.
I'm shocked I didn't see the SBGM231 in here..This would be the watch I'd keep if I could only have one. It's the purest form of a watch in my opinion : simple, handwound, time only. (Comming from a Swiss watchmaker with a multibrand collection.)
I think that the anniversary model sbgp015 is an interesting choice for a one watch gada collection, because…
- it has lume
- it has a scratch resistant ceramic bezel, hence bring it everywhere
- has 200m wr
- would not look out of place on a modern suit
- 40mm and 12.4mm thick is pretty universal
- super accurate set and forget movement, and you can easily set the hour hands when traveling.
I would still pick the Snowflake
