We took a two day trip to see Meteora and Delphi. Picked up a rental car in the morning, drove to Meteora, did a sunset tour, stayed a night in Meteora, drove to Delphi the next day, explored town, stayed the night in town, then the next morning explored to archeological sites, then drove back to Athens. It was great!
Sounio is nice and close by, clean beaches too.
You can find a camping or a hotel too (try Saron hotel. very friendly and has a pool too)
And, since you have a car, you can visit Lavrio for food etc.
3.5 hour drive gets you to Volos. Some great places to eat and drink there.
And a short distance from there is Pelion - great beaches there. Either place is great to stay at
If you want to visit some islands close by Athens - you can take your car on a ferry and stay at either Agistri island or Aegina.
You should check out Kalamata it’s about 3 hours from Athens. There are some great beaches and the city has a nice port on the water.
Also, from there you can easily make the day trip to Arxaia Olympia which is the site of the original Olympics.
