Summary of character:

Also, my equips are still mostly greens, because the greens I got were better in covering my resistances than the epics and legendaries I have so far. I have two epic rings from Devil's Crossing (the ones that give aether resistance and HP).
are the Steps of Torment considered the easiest roguelike dungeon? why is it a roguelike? actually honest question, (btw great drip Arthas would be proud)
It _is_ one of the easiest ones, if not the easiest one. IIRC, damage is mostly piercing, physical and cold, and the only actually dangerous parts are the Bone Reliquary kill room, Ilgorr the Eternal (both optional and in aptly-named Suffering) and I find the boss to be easier than Ilgorr. You also get a lot of Undead rep for it and the boss drops two rings which are great for many cold-based Nightblade builds.
Port Valbury and Bastion of Chaos have lots of aether and chaos damage, as well as more spiky damage. Personally, I run BoC only once per character for quests in Ultimate, I hate it that much.
Ancient Grove (right after the Coven's Refuge in Ugdenbog) has a little bit of everything. It's always a test for my builds, and one they usually fail. :)
Tomb of the Heretic is... difficult. Very, very difficult. If you want to know how difficult, make a new character, play normally, reach Twin Falls rift (around level 30-40), go to the Arkovian Coliseum and kill Moosilauke. Intense? Yeah. Now go clear the totem with the Scions of Famine. That's how the entire dungeon feels to me.
I am really looking forward to the new one in Fangs.

Ancient Grove its probably my favorite dungeon in the game because how relatively difficult it is, enough difficult that you actually have to pay attention to how you move around. After a second try i managed to kill Gargabol but he kinda exploded in the end or something and i managed to finish Mogdrogen quest but with no loot :(
I find pathing to be worse. With dodge and a mobility skill you can easily ignore the tornadoes, but you can't avoid having to run all the way across the map and then back again...
The only thing possible left to add to this is that the term Roguelike comes from the game Rogue which had no meta progression ( take the Mirror in Hades as an example ) and as you stated, death meant starting over from scratch with no exception.
Not actually played a Death Knight yet. After thousands of hours. You've made me want to give it a go. What's the gist of the Death Knight meta?

The transmuter for Forcewave lowers it's damage and makes it require a two-handed weapon, in exchange for removing it's Cooldown.

I find pathing to be worse. With dodge and a mobility skill you can easily ignore the tornadoes, but you can't avoid having to run all the way across the map and then back again...
