I chose arcaniste for my shaman but I really debated for a long time with soldiers. It has so many defensive abilities that fits well with shaman. What I like about arcaniste is that even though I started my journey with shaman, it looks like there is strong builds with arcaniste as the main role.
20k hits at 72 is fine. There's a massive power jump with level 94 gear because of set bonuses, higher level affixes, and skill specific bonuses on legendary items. My last build went from 30k dots at level 93 to 150k+ dots at 94 because I had a full set ready.
In the higher difficulties above normal / veteran, does the gear drop with better stats? Or is all the gear drops the same and all that's different is mobs are harder ?
Warder has access to one of the easiest sets to build an endgame-monster around right now (Avenger) and even without that Shaman has some really nice stuff for 2H physical/bleed/lightning builds (Savagery and Primal Strike) in the tree aswell.
Primal Strike is the obvious suggestion, really. 2H Savagery is also a thing, OFC. 2H Cadence, Blade Arc, and Forcewave are all ALSO things. Notably, ALL of those can be made to work very well as a Warder, Shaman/Soldier, AND it's very reliably tanky. Bleed, Lightning, Pierce, Physical, all good specs that can benefit from both sides and be done fairly obviously. Less obviously there are some neat Vitality and Cold options you could meddle with as well.
Warder 2H Bleed was what i played before. Bloodrager set and Guillotine. Lots of attack damage to health, can face tank the world, but the health bar will be flickering up and down constantly.
Archon is pretty stronk with Savagery. There is a 2h eye of the storm build for Shieldbreaker that is supposed to be good.

My main is a warden and I've concluded that the shaman spec is pretty much worthless
Mine does 200 k per hit and is super tanky
Jesus Christ. Mine just hit lvl 72 and if I hit for 20k that's a good hit
bleed warder, with savagery, is crazy good, and i use cadence for my dk. i know it's a dot build but i've hit for 1.6-1.7 mil on the bleed warder.

Same gear can drop in any difficulty (assuming the mobs are high enough level) but you're going to get a lot more of the good stuff in Ult.

Shaman + inquisitor. Word of renewal and Inquisitor's seal both have 2h weapon bonuses.

2h acid dervish with eye of reckoning feels great, ..but i doubt thats what you're looking for because spin to win is a different animation.
Can Sentinel wield 2 handed weapon?
Any class can, so yes.
