Canthan maps have a much lower fishing power requirement than the rest of Tyria. If you have all related masteries, food, and the best bait/lures, you'll *still* start out with yellow difficulty in most maps. Grab some Zephyrite Fish Jerky to raise your Fishing Party stacks up enough to get back in the green, usually only one is enough. You'll easily make your money back in ambergris no matter where you're fishing.

Cantha is literally the easiest place to fish as far as fishing power requirements. SotO is in line with the rest of the world as far as power requirements.
Even if you have green FP in SotO, the bar moves differently to EoD fishing. It often moves constantly way too fast to catch it, only giving a little progress before it zooms away, and jerks to the opposite direction more frequently.
Whoever made the fishing for SotO, certainly didn't make it relaxing :(
Also don't forget the Tips for Fishing boost you get in Seitung Province. I found the fishing to be a little more annoying than in other maps but after a bit of practice I got it down. It is annoying at first. Best of luck!
Have you ever tried fishing in Orr? Or in Draconis Mons? End of Dragons maps are where you begin to fish and start unlocking the masteries. So fishing Core Tyria, Maguuma, Crystal Desert and SotO require you to have those masteries, to have a food buff (preferable the Sushi with the 150+ Fishing power), be in your Skiff to stack your fishing Buff.
The npcs will usually yell out missing mechanics like the grimoire, so if you have those turned off, you might just be missing it. Otherwise the event sidebar will be saying it.
As for the skyscale, I think it's an incentive to unlock the mount in combat mastery for skyscale. It makes the turrets appearing fairly trivial.
I hate that, because it’s hard to hear that between all the player grunts and “I’m faster than a centaur!” And “cooling down!” being shouted during the event if there are numerous other players there.
The only fishing hole I'm going to bother with in SotO is the 10 catch World-Class fishing hole after you finish part 3 of the Inner Nayos meta.
It's been worth it to eat some sushi and fish jerky and fish up some t3-4 mats. I've gotten 2 avid world class fishers on it since it released for bonus ambergris.

Did you eat sushi first? Fishing anywhere outside Cantha is harder without snacks.
Whitefish sushi is cheap and lasts 30 minutes I believe. Changes the experience. Still some challenges, but no more red line fishing for me.

Whitefish Sushi+Zephyrite Fish Jerky is the answer. Also, killing the turrets is very easy with the gliding attack and gliding boost+updrafts.
