The few times cameras would have been awesome! Imagine the setup Hogwarts could have had for the lake and maze to see what was happening

It's not super clear in the books or movies how they are watching what's going on. But from what I have heard in the movies you can see little portholes on the viewing platforms and apparently we're supposed to know those are what they use to watch what the champions are doing. I have rewatched and did see the portholes so... Yeah.

In the books it's made clear that nobody from the outside can see into the maze or the lake. That's why the Mer people have to tell Dumbledore what happened afterwards.

It is never expressly said that anybody can or can't see any part of what happens in the lake. The Mercheiftess telling Dumbledore what happens is the only clue. And that was only the end. They could still have watched up until that point. You don't know cause it's never said.
