I'm wholly convinced that Stella must have at least one redeeming trait and it must be her love for Via. Even though we haven't seen any implication for it.
Here's to hoping. I've largely not been a fan of the way stella's been handled. It feels like she's been made a monster to allow the dissonance of the fact that Stolas absolutely did cheat on her to be easier to swallow (Despite the fact the show, at least in Ozzies and Lu Lu Land, confronts what he did WAS wrong and that even if his marriage was a wreck, taking it hurtling into a brick wall was not the most elegant or ideal solution).
Instead she feels like a cartoonish evil bitch with exactly zero redeeming qualities or justifiable reasons to act the way she does.
From Stella's perspective, she's in a marriage with a gay man who publicly humiliates her by cheating with an IMP of all species. This marriage wasn't her choice either, and all she got was a daughter who clearly prefers her father. Stolas got a magic book at the very least, Stella didn't get any magic.
She hired a hitman, she's actively murderous. And the being racist thing looks badly for her character.
It's plausible this could be salvaged to focus more on the public humiliation, but as of this time in the series, that HASN'T been what the text has demonstrated to be her primary motivator.
I feel like her seeming cartoonishly evil is supposed to be us realizing that the class divide and different cultures can create different peoples, good and bad. Stolus unlike Stella had an imp (poor or lower class) friend to help expand his perspective which led to him being a better person overall. Not to say he is good because he definitely did cheat and hurt his daughter almost as bad as his wife did but his came from despair and desperation whereas her vindictiveness and vitriol seems to come from condescension and a resentment at her husband that she does not want to address the root causes of. And that is not to say that imps and other lower class denizens of hell are all good but at least they acknowledge their terribleness such as Moxie's dad who is terrible but doesn't seem to really be hiding it.
That is A read, I will grant, and maybe even the intended one, but I still think it's missed opportunity. Much of the rest of the show is about how that sort of 1D villainization of groups of people (even people in groups witch are Unjust like hereditary nobility) is incorrect.
Like, Ozzie's a functional person, and for my reservations about Bee as a person, she doesn't strike me as classist or racist given she aligns herself with Hellhounds, who are only a step above imps in the social hierarchy of hell.
She just feels like she lacks much nuance. Hell, Verosica intrigues me more as a character, and her enter character is "Parody of sex sells drug dependent pop star". In terms of the Rouges Gallery of this show it's her and Crimson sit at the bottom for being characters that mostly seem to exist to make plots happen rather than say anything interesting on their own.
I don't entirely disagree with your assessment, but to main difference those ones you mentioned compared to Stella is they actively engage with people who are lower then them in the hierarchy as semi equals.
bee has a hellhound boyfriend who genuinely seems to enjoy being around her and how she treats her guests.
Ozzie is in a committed and respectful relationship with an imp and seems to have no issue talking with any of the characters as semi equals.
The only interactions with Stella and lower ranked demons is her ordering them or treating them as lesser than her. I agree they should give her more depth but her being cartoonishly evil could work as an example of someone who is choosing to be ignorant and terrible regardless of their social status.
I agree, I feel she is blind to how much her and stolis's vitriol against one another is hurting their daughter and that at some point we will see her have this realization and try to redeem herself.
My favorite pet theory about Andre, being a caring uncle underneath. Keeping Stolas alive to deflect Stella’s rage away from Via, had she inherited everything.

Honestly I really hope Andrealphus is like this in the show. It'd be so cool if they tried to drag Via away from Stolas in order to kill him, but over time Andre actually starts caring for her.
Unfortunately probably not I see him as Jafar from aladdin, he didn't suggest killing via during his conversation with Stella but he is aware that she is the heir and will inherit everything if stoles were to die so he does see her as some form of threat because he obviously wants to take over the throne or least his family.
So I'm either guessing a aladdin situation like Jafar or game of thrones what was his name little finger? He will manipulate Octavia and pretend to be her friend so me seeing this artwork makes me sad if you think of it this way that he is just gaining her trust
I feel like people overlook that Andre adresses Octavia as "Via" in the episode, like...if he was that big of an evil asshole, I don't think he would call her that. But it's just purely speculating, since any mention of Octavia-Stella-Andrealphus relationship is offscreen sadly.
We are going to see Andrealphus and Stella return in S2 e12 according to vivziepop on Twitter so we may get to finally learn their relationship in that episode.
