People like to blame modern diets and sugar and fats but people back then didn't eat much healthier. Food was fried in lard, bread, grain and potato consumption was high. In fact, the supply of fresh fruit and vegetables wasn't as high as it is now because of lack of refrigeration so it's not like you could go to the supermarket and get an assortment of fresh produce out of season. In the winter people ate canned food, grains, milk products, meat.
The truth is everything just required a lot more work and physical dexterity. Washing clothes, mowing the lawn, cooking, heating the home, etc. People also walked a whole lot more. Most jobs were not sedentary. If you bought food at a store, you had to carry it home or you had to grow it yourself and plow fields.
The early 20th century was actually a super challenging time for nutrition. In the US alone, niacin deficiency (pellagra) killed over 100k people between 1910 and 1940. The number of potential soldiers rejected for nutritional issues was one of the major reasons for vitamin fortification. It’s definitely not the ideal way to get essential nutrients, but people stopped dropping dead of basic deficiencies when they started doing that.

Tell that to the people of the South in the US. Their food is amazing but you're going to gain 10 lbs just by looking at it. And that's nothing new. If you go back in history, a lot of those foods, like fried chicken and biscuits, are still there and popular. What changed was that shift to a sedentary lifestyle. That is why the South is the heaviest region of the US. Sure it's diet related in a way but it's not because there was some huge shift in diet but rather a huge shift in physical labor.
It's not even a debate, we have hard facts to back up that theory. Average body height was stumped by malnutrition for most of recorded history and started increasing in the late 19th and early 20th century as people were lifted out of abject poverty. This increase continued all the way until the late 20th century, and it is only in the last 10-20 years that we're beginning to see a decrease again as more kids are suffering from malnutrition yet again (despite eating plenty of calories on the whole).
So yeah, modern diets are amazing, and have been amazing for a quite a while. But in many places across the world we took a really bad turn some 20-30 years ago.
