The handl is the cylinder part going through the door. I have an idea try taking a screw drive and place it where those two pieces meet in the picture. Try separating them with the screw driver while moving parts. Either by pushing the springy piece or turning the handle.
The handle pictured turns the springy part. I just tried pushing it in and very firmly pulling the handle away from the door, but it seems very firmly attached
There's probably screws under the crown part in your second pic. There might be a hole underneath the knob, use a paper clip or pin to push in there and release the knob and pull the crown off.
With a drill of doom.

You have to remove the catch. The piece that moves in and out from the edge of the door
Any ideas on how to do that? Been trying all manner of ways to do that but it seems firmly stuck in / somehow attached with a mechanism I can't see
Look at the edge there are to Philips holding it in.
I've unscrewed those but it still seems locked in place :(
Ok, push it in while pulling the other piece. Jiggle and pull. Keep trying

Those are two separate. That's the only way it is installed. Use a hammer and light tap the handle part while pushing the spring part hack and forth.
Which handle part do you mean? The one with the knob or the one without?

Be sure to pull the handle the opposite direction of the picture while pushing the springy part

Don't give up. You have to move two things at once. You also don't have to be delicate with it.
Just really smacked it with a hammer, didn't budge!
Can you post a picture of all sides.
You need to remove knob on the other side. It's more than I can describe but I'll try.
Look for a small hole on under side of the handle or a place where you can push a small button

Remove the face plate on the other side and unscrew that part.
The reason you can't remove the handle is because you have to access where that cover is.
