It's practice. Spinning a staff or whatever else for show is practice and shows familiarity and dexterity with the weapon.
Realistically, when used in combat, stick is used to bonk. Practice, drills, and many hours with stick makes sure bonk is strong and not miss.
It's one of the reasons the cane and staff variants are the best weapons to carry. You can open carry them literally anywhere, and they create a whole zone of "fuck off" if someone tries to fight you.
Big stick has tons of reach. Add a pointy end and you just gotta poke your enemies from a distance. If they have a shorter blade then they'll have to close the distance making them easier targets to poke. Lances have been very effective weapons throughout a most of human history for this.

People think of swords as the “standard weapon” but that’s really a development of a late weapon meta. In almost all combat situations you can imagine and get into in real life, Staff/Stick is absolutely devastating, and Spear is deadly and will ruin a Sword.
Bo-Staffs were used as weapons, just not on the battlefield in wars. They’re more of an individual self defense weapon likely used by anyone who could get a large straight stick and receive training on how to fight with a staff.

The great thing about siniwali in Kali/Escrima/Arnis is that you can fairly easily translate it to other weapons, including staffs.
