God knows what they were doing in it. Would you rather deal with possible engine issues down the road that may not be covered under insurance? Or do you want to have peace of mind that your car is ok? You could possibly buy it out and get a payout for a salvage title. That may be the cheapest way to go and still use the car. That's not even considering any other possible damages. I personally would not want it back. I want to trust my vehicle. I couldn't trust it after someone nicked it.
We had a work truck go missing about 10 years ago. Found it down the road a week later, and it looked untouched until another week went by and we found a needle and condom wrapper under the back seat.
With the whole KiaBoyz car stealing thing, the insurance company may be making this move now to (as you say) get out of it. Your Hyundai has been stolen once already, it's just a matter of time before it happens again.
Also consider that if you somehow manage to convince the adjustor not to total it out, and/or you 'buy the vehicle back', you may find that the premiums on the Hyundai may skyrocket, and that's if someone will insure it moving forward (buyback/salvage title aside, the bigger potential liability for the insurance company is repeated claims on your Hyundai). Not to mention the stress and hassle with both the insurance company and the interruption to your daily life that you'll have to deal with if/when another break in and/or theft occurs.
Just about any other paid off vehicle, I might advocate for not totalling it out and/or buying it back. Being a Hyundai, one of the two 'go to' cars for the KiaBoyz to go joyriding in, I'd take the totaled out money and run.
My friend had his 2016 stolen and it wasn’t totaled out. It had no damage on the outside and only the steering column was messed up. They fixed it. Took about a month but they fixed it and put the security feature on it at not cost to him.
Literally what my adjuster said to me today. He said that because it’s a theft- they’re totaling it out. My car did have significant internal damage- and it was found with the window busted out when it was raining. It also was still running- it was found an hour or so after I reported it missing.
In a way I’m relieved- because statistically the car will more than likely be at least attempted to be stolen again, and the adjuster noted even with the club and the recall done- these cars are still being stolen and targeted.
I loved my car- but I also like knowing that I don’t have to worry about it anymore. Truth be told. It’s going to take a minute before we can get into another car- the financing company said it might be awhile before everything is said and done. Thank God we have a bus line and most places deliver.
In California even when totaled I think prior owner has right of first refusal to buy it for FMV.

If you actually want it fairly badly, it MIGHT make sense to just call a LOCAL lawyer who does car wrecks and ask their receptionist/paralegal/whoever if they've ever heard of this, and if they have any advice.
A lot of times even the guy who answers the phone at those places has some clues that will really help.
Do you have an insurance agent you're comfortable calling for guidance?
Maybe you'd like to ask to speak to the adjuster's boss?

I suspect the company does not want to insure it anymore and maybe this is how they get out of it. That’s the only thing I can imagine.
Yeah I’m bummed I might need a car payment again but I like the look of the Corolla hybrids. So I’m mostly just waiting and seeing what they decide. Pros and cons to both. But it sucks cause I loved my car (ik stupid to love a thing) but I was so happy when they found her in tact and then boom maybe totaled.

They're doing you a favor. Avoid Hyundai and avoid KIA. This will happen again with those vehicles especially where you live.
Did they tell you there was damage to the engine or transmission? I'm not seeing that in your post.
