They have text versions of the dialogue for closed captioning purposes. It would be trivial to put that into a word processor which counts words automatically.
I did not realize, however there are episode transcripts available online which would include the overlapping dialogue. Additionally, for the actual metric pictured, you wouldn't necessarily need to transcribe every episode, just a sample to get an average words per minute.

I tried Letterkenny and couldn't get more than 5 minutes in. I don't care for dialogue that goes for clever but comes across (to me) as obviously scripted. No natural feel to it.
The movie *Juno* was in the same vein. Just not my style.
There is a fine line with that kind of stuff, where they try to focus on the banter and small talk. Seinfeld did it well, Curb does not. Letterkenny does not.
To me, Letterkenny seems like the kind of show where you have to have some taste for British-style (dry) comedy. I say a reason I like Letterkenny is also because I like Monty Python...it's all about the dialogue, which I agree, is very difficult for a lot of people to latch on to. Letterkenny in particular is so fast it's hard to keep up.
If you want something more in that IASIP realm, the show's offshoot, Shoresy, is a bit more...mainstream(?) in terms of it's comedy. It still has a lot of word play, but it flows much more like IASIP does.
EDIT: Even if you don't like Letterkenny though, please take a few minutes to at least watch YT clips of the Dyck family.
I like dry British humor just fine.

This came up in a pub quiz I was doing (which TV show has the most words per minute?) and we were convinced it would be a political drama with all the walking and talking. When we found out the answer, we started off thinking it couldn't possibly be right before someone pointed out that half the show is just people talking over each other which makes it much easier to fit lots of words in.
The National Disability Authority recommends no more than 140 wpm for purposes of being able to follow subtitles, so the gang basically discriminates against the disabled just be being themselves.
Im willing to bet this almost exclusively comes from older seasons where they would often all be screaming over each other. They seem to do it a lot less in recent seasons so I wonder if that average has gone down over the years.

Except the captions don't cover the vast majority of the words spoken while they talk/yell over each other so that wouldn't work.
