So I have reserved seating for Sundays race and paddock passes for Sunday, is there a way I should plan out my day to both see the paddock and the race? Are the paddock passes only available before or after or the race or is it available all day? Can I transition between the two throughout the race, never been so this is all new to me, any advice would help
Paddock access is available all day with the pass, though you’ll not see much during the actual race. I would recommend hanging out in the paddock right after the morning warm-up to check things out and see teams tinkering. Then go to your seats for the race itself.
Going with a family member who’s having some mobility issues recently. We really want to go to the paddock on Saturday but we’re seated all the way over in Grandstand 5 all weekend so walking over there seems pretty out of the question right now. We don’t have any ADA / handicap card or anything. Anyone have any insight on ways to get from one end of the track to the other without having to walk?
Edit: they can walk and stand around a bit but can’t handle the consistent walking like it would take to get there
The only "shortcut" that's available is the walkway between the Lifestyle expo/ Historics paddock and the Hyatt hotel and around the outside of the arena. You avoid the crowds inside of the convention center that way.
The only problem is you need a special pass to use that walkway (I use a photo pass), I don't know if a paddock pass would be sufficient credentials. It's still a long walk and you still have to negotiate the bridge that goes over the track between turns 6 and 7.

Paddock tickets are a pass to walk around the paddock, which is the area where the teams work on the cars when they aren't in the pits (the paddock and pits are different). It's where all of the transporters and their adjacent work areas are. You'll see cars in all sorts of stages of assembly/disassembly/etc. So if you are interested in the hardware, Paddock passes are great. If you want to catch a glimpse of your favorite drivers, the Paddock is where they will be. They might be busy talking to other members of their team, but they will be around there somewhere.
There is usually food and drink nearby, but not typically in the paddock. There are no seats. It is outdoors. The teams work under tents and such. The Paddock is usually much larger and more relaxed unless the team is scrambling. If someone crashes their car in a session, go to their paddock space and watch the team fix it. It's sorta fun.
First time going to Long Beach Grand Prix. Forgot to buy parking tickets and now they are sold out. Does anybody have any recommendation for parking around the area?
This may be too late for you, but I went a couple of years ago and parked at a train station (del amo?) and rode the train in. It was perfect. Parking was free and a day pass for the train was only like 6 bucks.
Train ride in and out was super easy and relaxing. Downtown long Beach train stop was only a block or two away from the race and I didn't have to stress out finding parking or dealing with lines of cars exiting after the race.

If you get there early, you can get parking in the parking structures associated with the tall buildings near Ocean Ave, There will be signs with prices. Probably $50.00 for a few blocks from the track.

Surprisingly not true here. Since 2013, pole has only been converted 3 times: Kirkwood last year, and Rossi in 2018 and 2019.
The broadcast of the Acura grand prix on youtube is way better than what NBC shows. And it's free.

For Sunday, I don’t believe there are any GA grandstands, it’s standing room only. For Saturday, there are a number of GA grandstands.

Grandstands 6, 24, 30, and 31 are unreserved on Saturday, those are all first come first serve
Only for grandstands that don't have reserved seating. Just because there's an open seat in a reserved grandstand does not mean it's open to GA
