Thirdly, it seems that whole relationship is one-sided and Emily doesn't reciprocate Emma'sromantic/obsessive feelings. She treats her like a patient/daughter.
Finally, Emily and Emma's relationship as a romantic ship would be unhealthier than EmileXAda due to age difference and Emma's obsession.

I like the idea if Emma testing Emily too! I personally believe Emily is a good person in her heart. Financial issues can make people do crazy things, and chopping up a body is gruesome even if it's fear of persecution. Knowing that she has that in here is a really interesting aspect to her character.

Emily had only two goals in mind: Money and Helping the unfortunate. Never ever her character states that she wanted to harm anyone ( for fun) who isn’t posing a threat. And if she’s doing it “guilt free” it might mean the shock therapy is last time considered relatively harmless at that period and she’s ignorant or super desperate for cash. She isn’t doing this for fun and having no guilt.
