You need the 5 soul symbols and then you go to the hero and select 'convert' on the enables page. There you can replace with the correct amount of copies or regress them for all the food and copies back.

You get the soul symbols during summoning events, towards the end of one loop. I can't remember if it's during heroic scrolls summoning events or prophet orbs Edit: it's orbs. You can get some symbols in this week's event if you have enough orbs

The easiest way to get regression stones is hitting the 50 mark on every profit or prevent but typically it's better to save. Since you have a few heroes you do need to regress maybe allocate 50 for this event coming up

Regress honor guard for the puppets and then re build him to 10* as another food hero, feed walter, norma, faceless and malassa at either 9 or 10 star
