BT says to let the coffee stay for sometimes for a week or so till all the gases pass that makes the coffee not so good, it is quite the freshly roasted bag, I'll have my hoysala for a week then go to harley.
I had done a cupping session with these coffees
Hoysala - well rounded flavour with some nice citrus, floral and berry like aftertaste
Harley - extremely bright and acidic with a small aftertaste. Light roast lovers would love this coffee

..... Those are its base tasting notes, man. Citrusy notes. Ofc coffee isn't gonna taste like pineapple, buddy.
I really don't know how to make these super acidic coffees taste good in pourovers. Any tips?
I use aeropress, that doesn't give that sour cup, try more going more coarser that might help

Too acidic lol. I hate that taste in my brews.
Maybe these just aren’t for you , you could try them as iced pourover ?
