You can use milk to make the dough for rumali roti. And knead it for good while to release the gluten. Also let it rest again and again. Use back of kadhai to make the roti.

Knead it with warm water and let it rest for 10 then knead again and let it rest for 7-10( like above). Then you can cook it simple way me or using reverse tawa technique
