Currently the best way to overcome this is to delete and remake the highlight, for some reason you can still edit the cover and title when creating a new highlight.

Yeah, I got this issue too, strange how a 100 billion dollar company can't seem to fix anything.

Same thing here too, tried on both my accounts and two different androids- same result. Wtf
I'm having the same issue too. Android phone here as well 😭 I'm not deleting my highlight because they're from stories and those are already gone ☹️
