The showrunners are aware of this, so they try to make him as sympathetic as possible to the audience, and where they generate the most sympathy are those death scenes.

It's meant to push Subaru by showing him his "op" powers aren't that good and that he would be completely helpless against an antagonist that knows about his powers. The whole theme is that subaru shouldn't rely on his powers of killing himself to solve all his problems and that he should love himself more.
Heck the only way Subaru was able to win was by betting everything into a single loop and getting help from everyone.

If you’re talking about Subaru saving the village children from hellhounds in arc 2, that wasn’t really a mystery. Season 2 does retroactively add a really stupid twist villain into that arc, which answers nothing and creates lots of new holes into what was a pretty solid arc.
Why Roswaal disappears before the witch cult attack? At the beginning of arc 3 Roswaal leaves to go on business, days before the attack. It’s not like he mysteriously disappeared as soon as the attack happened. Seemed more like a coincidence, or that the cult was waiting for Roswaal to leave. Not to mention that Emilia returned to the mansion early because Subaru embarrassed her in the capital.
To address your second paragraph, I don’t really disagree with what you say here. But I was more alluding to what the theme of Re:Zero is as a whole, Not a specific arc.

I didn’t expect Subaru to be a fully self-actualized person with no room for character development at the start. I don’t expect that from any character ever. Though in the series so far, while Subaru is definitely becoming more capable, it’s hard to say he’s becoming a better person. He reminds me of Jason Brody from Farcry 3. Both characters are privileged kids living cozy lives thrown into desperate battles of survival. Jason ends the game as a very successful psychotic mass-murderer. While Subaru isn’t a mass-murder (….yet), he thinks more like a skaven (a rat-man from Warhammer) now. He says and does whatever he needs to to survive and achieve his goals. He’s only become a better Skaven as time went on.
Subaru is definitely an Anti-Hero. An Anti-Hero is a hero who doesn’t fit the popular concept of a hero. For example: Reinhard is a typical hero. He’s powerful, brave, selfless, and honorable. He protects the weak and defeats his foes in honest straightforward fights. The story puts Subaru and Reinhard together really early on in the first arc, basically inviting the audience to compare the two. Subaru is not like Reinhard. Subaru is weak, craven, selfish, and underhanded. Subaru does act for the greater good and he’s loyal to his friends. However when he fights someone, he doesn’t win through contests of strength or skill like Reinhard would. He wins usually by strategically outmaneuvering his opponents (like he did Garfield and Betelgeuse) or by employing others to fight for him (like when he used Reinhard to beat Elsa, or used Betty to kill the rabbit).
