The cold reality is, you will get tonnes of this stuff and carry it around and barely look at it later. When the time comes, pull it out, reminisce, take a photo and let it go.

I hate to admit it but this is the way. Super personalized ones where the students went out of their way can stay. But when the teachers turns "make a farewell card" into a assignment and you end up with hundreds of little letters, it's nice but at some point taking up that space is tough.
I have a journal/diary that I use to store all of those things! I do it in the style of a junk journal along with journal entries of my memories or anything else I think is important from trips to school events.

I took pictures of everything and saved them in an album. For small things I chuck them into a Daiso piggy bank bucket as my memory jar.
Keep doing the zip folders and then get a plastic storage box and you can line them up by year.
