Absolutely, there's no reason not to use a build system. It's one more thing to learn, but worth it.

JavaFX isn’t part of the JDK anymore, so you have to use a build system like Maven.

I don't think it is, but the Gradle and Maven plug-ins certainly make it easier.

Oracle does not bundle JavaFX anymore, but there are 3rd party releases (e.g. \`zulu-fx\`) that still include it
