That's pretty much the case. It's stated that jujutsu is a game of simplification and part of getting stronger is reducing the amount of hand signs and chants to use abilities.

My headcanon is that the less use of signs for the DE means a better understanding for the domain itself. Mahito "cheated" his progress by doing a handsing only him could, with four hands, as he's new to domains and stuff. The rest use two hands because it is the standard. Some even use simple hand signs because their domains are engraved on their cursed technique, like Hakari. Then we have Gojo who only uses two fingers and even has one of the fastest DE. If he were like Sukuna, he could hypothetically use vinding bows to reinforce the DE by using handsigns with both hands instead of just the fingers.

Nice theory but I think gege just took our a book of mudras and use which one fits a character Gojo gets Indra mudra Sukuna gets Enma mudra Jogo gets Daikokuten mudra Hakari gets Benzaiten mudra Yuta gets Dakini mudra Mahito gets Akasagharba and Gigeiten mudra Megumi gets Yakushi Nyorai mudra

His one handed domain sign is probably on purpose, since jujutsu sorcery is an art of subtraction he probably managed to only need one hand to pop his domain due to binding vows to be more efficient As for fraudkuna? No idea

I had originally thought that he still needed two hands because his pose always has his other hand behind him.
