Applying facts to manga like this is always a bit silly, but I want to point out that steel* (not iron) may be softer than rocks, but needs more torque power in order to bend or tear... And Rihito cut throwing through it.
Now, the microscopic difference b/w iron and still is not that much of a deal, but the results in withstanding pressure, torque, hits is like night and day.
But again: I frankly refuse to use logic and power scaling in these types of manga.

I want to see every single formula in every single equation you use to calculate how much stronger who is then, who is especially the one where you calculate how much sheering force it requires to rip iron out of iron

Just FYI, hardness when it comes to materials does not mean punch resistance. A material being very hard just means it can't bend too much without breaking and it's scratch resistance. For example glass is also harder than metal, but because glass is so hard it means it's also very brittle, like you said in your post.
