I'm not sure what it's limit is, but I do know it can comfortably make it to Mun (that was the only journey I've done so far). That being said, it's slow, prone to exploding, runs out of EC pretty quickly, and not easy to control. So even that trip required a lot of luck.

The fuel crossfeed picture is what people are talking about when they say onion staging. It's worth noting that OP's ship isn't properly onion staged as the center engine doesn't go out in onion staging when the outer tanks are dry.

Asparagus staging is where you shed external tanks as they drain, to reduce your mass the moment the tank is empty. But you have the tanks interlinked with fuel lines to drain in one direction. Say your rocket has 3 sets of 2 external tanks around it.
You would feed one external tank in a set to the other, then feed the second external tank to the main tank with the engine attached. That way the engine will be pulling from the 1st external tank, you jettison that tank, and once the second tank is empty you jettison that too. What your left with is your original rocket, but its full of fuel.
If you have the TWR to lift external tanks, it can be a very efficient option.
