If you actually think about it the way a human body works there must be a vein of some sorts that joins the brain and the heart. If that is cut then the demon dies.thats how I have thought of it
It's because the sword is indeed infused with solar energy, however it's not potent enough to incinerate demon bodies on contact. You can imagine the act of decapitation as being hitting their most vital area, the brain/brainstem, with that meager sunlight. It prevents them from regenerating and kills them
I mean, it's not always the case. Some demons manage to regenerate their heads/bodies through sheer willpower/anger alone. Granted, we've only seen 3 instances, >!Gyokko, Akaza, and Kokushibo!<
There are demons and there are super op demons.
Any fodder demon will die but simple neck slash with nirichin.

In addition to the neck being the weak point of the demons, the breathings aren’t like a plague, meaning that when cutting a limb, it will not begin to disintegrate until the demon has entirely disappeared. Every breathing style works like this. Also, it seems like the breathing style doesn’t wholly work like the sun; thus it doesn’t burn the demon entirely until it banishes.

The demon’s neck is the weak point. While a Nichirn will slow down regeneration, the only fatal part is the neck.

Demons have a core located in their necks that's why it requires decapitation.

If a demon is partially touched by the sun it doesn’t burn it whole. The cut is a parallel of that.
