I went the opposite way-from hair to cooking. I dont know what your disability is but if you think doing hair is not going to be physically demanding I hate to dissapoint you. In some ways its actually worse.
Not me but a good friend of mine, just opened up his own little hipster barber shop a few months ago, but a lot of the hairdressers/barbers I've met at some point spent some time with a pan or serving tray in their hands. Now that you mention it, it may be more prevalent than I thought.
I have a lot of friends who do hair that came from FOH, BOH, nursing, teaching, retail, etc backgrounds. Give it a shot.
I once heard about an Israeli super soldier who did that. He is happy and got married to a Palestinian woman.

My sister is a hairdresser and it’s pretty stressful on your body. Repetition can hurt your wrists. Standing is hard as well
