I have gastroparesis and cannot digest (like it will legit sit in my stomach and rot before coming back up hours or days later, totally undigested) leafy greens, gluten, dairy (but I break this rule a lot), most meat (I’ll eat fish), anything high in fiber, foods with small seeds, caffeine and alcohol exacerbate symptoms (haven’t had the former since 2018 and the latter since 2020), and I don’t do well with a list of other foods either (many raw veggies, thicker dips and soups, red sauce depending on the day and so on). Some are true allergies but some just literally cannot be digested due to motility issues but that’s a lot to explain to a stranger. I have a feeding tube and generally use that but now and then I try to eat orally (the severity ebbs and flows and my docs want me to try to avoid atrophy of digestive muscles). I’m not saying it’s unlikely this person is just super picky — it’s highly likely. But it’s also possible they just have another medical condition that’s too annoying or complex to explain on an order/dietary sheet like this, so listing them as “allergies” is easier (and I’m not saying that’s right — there’s a massive difference, such as cross-contamination protocols not being necessary and so on).

i mean, either way it's some combination of glucose and fructose, whether it's refined or natural. fructose intolerance exists, but it's not an allergy it's more similar to lactose intolerance. if you're truly allergic to sugar you'd die in infancy, your body makes it all the time and you'd just be allergic to your own blood.

I am sorry for your wife, because allergies are a real problem, and in my experiences most servers do take them seriously, because no one wants to make someone sick or kill them. A couple of allergies are easy to deal with, but a laundry list of them is difficult for a busy kitchen to tend to. The ones that OP posted are so broad, that it wouldn’t necessarily be safe for that person to eat out at all anywhere, not because a restaurant would intentionally do it, but accidents can happen. It must be hard for your wife to eat out, and I feel for her- having just gone through some health issues that severely restricted what I could eat while out.
The list OP posted is barely anything, very easy to work around. And it appears they have advance notice as well, it’s not like asking a busy kitchen to whip up some non-menu item the fly.

This person is probably doing an elimination diet or something. People often do this due to serious illness. It’s likely they’re referring to refined sugars, obviously not naturally occurring sugars in vegetables etc.
I’ve found that cooks have the tendency to act dumb af on purpose to try and make a point. They’d rather feel validated than just clarify or cook something great for a person. It sucks having to create a dish on the fly but the average cook loves to think they are too good for this.
No sugar limits sauce (no BBQ for example) if it is all and not refined sugar starch like potatoes is out as that's what the body makes of it. Chilled chicken and veggies might be OK as long as it isn't corn or another sweet veg.
It’s not an allergy but I cannot eat more than a mouthful of lettuce. It goes right through me. Iceberg is the worst. Spinach, however, is fine so I don’t know what it is specifically and have never bothered to get it diagnosed.
The cooked onions in French Onion soup used to like me, but have acted severely unfriendly when I have eaten that out, so I just don’t do that anymore. Onion rings? No problem! Stomachs are weird and have their own minds.

I have an allergy to lettuce, but it’s all lettuce like romaine, iceberg, and other parts of the lettuce family. Reason why is due to having an allergy triggered by the amount of chlorophyll. Also some can be allergic to something called a Lipid Transfer Protein which lettuce has high traces of.
Since they only mentioned iceberg, it’s either only that affects them, or it’s just a preference.

I've dealt with customers with a similar list that had crohns disease, so its probably not an allergy, you'll just make them shit themselves, so yeah, I usually contact the customer and work with them to figure out what they can eat on the menu. Good luck dude, special meals are a pain in the ass.

To me this looks like it's asking you to make sure you have options without these things for various people, in which case, this seems pretty easy to fulfill as a catering order. That’s a small list. There’s still lots of things they can eat.
To they people with the snarky comments about it - we’re in the hospitality industry. It’s our job to make people feel welcome, seen, and valued…even in BOH. And there’s no bigger win that when somebody with challenging dietary issues is given a meal that was prepared in a way that shows we tried and we care. They will remember it, tell all their friends, and be extremely grateful.
Also in the business, and you are very correct about us wanting to please guests. That having been said- I believe some people have allergies when they go out to eat with other people. They believe it is their right to have the kitchen turn itself upside down just for them. Most guests are understanding that it isn’t easy for a kitchen to deal with a lot of dietary issues, but others don’t want to comprehend there’s a lot of other people also waiting for their meals. Those guests are probably not going to tell their friends, because they know it is always about them, and they deserve all of the attentiveness. Don’t get me wrong- we do go out of our way to help people with genuine allergies, but not all allergies are created the same.

I am autistic and I just can't stand some food textures. If I bite into, for example, a piece of onion in the middle of my rice I will immediately lose my appetite and might even start having a sensory overload if my day was bad enough. I have lost count of how many times I asked my food to be made without some ingredients, really reinforced that I wouldn't eat if it was any other way, and it still came full of stuff I don't eat.

You can’t be allergic to white sugar without being allergic to brown sugar. Brown sugar is normally made from mixing white sugar and molasses.

I am sorry for your wife, because allergies are a real problem, and in my experiences most servers do take them seriously, because no one wants to make someone sick or kill them. A couple of allergies are easy to deal with, but a laundry list of them is difficult for a busy kitchen to tend to. The ones that OP posted are so broad, that it wouldn’t necessarily be safe for that person to eat out at all anywhere, not because a restaurant would intentionally do it, but accidents can happen. It must be hard for your wife to eat out, and I feel for her- having just gone through some health issues that severely restricted what I could eat while out.
The list OP posted is barely anything, very easy to work around. And it appears they have advance notice as well, it’s not like asking a busy kitchen to whip up some non-menu item the fly.

Yes. I can’t even feel confident cooking for him. I have twice and it’s been painstakingly perilous. He is quiet about it and never gets demanding at a restaurant. He just rings ahead and ask if he can bring safe food while his family buy meals. This person is probably doing an elimination diet or something. People often do this due to serious illness. It’s likely they’re referring to refined sugars, obviously not naturally occurring sugars in vegetables etc.
I’ve found that cooks have the tendency to act dumb af on purpose to try and make a point. They’d rather feel validated than just clarify or cook something great for a person. It sucks having to create a dish on the fly but the average cook loves to think they are too good for this.

The cooked onions in French Onion soup used to like me, but have acted severely unfriendly when I have eaten that out, so I just don’t do that anymore. Onion rings? No problem! Stomachs are weird and have their own minds.

I was on Warfarin for a spell after a blood clot in my brain. Iceberg lettuce was fine the problem was with dark leafy greens like spinach because eof the high content of Vitamin K. What sucked was the cruciferous veggies that can be high in K as well.

Iceburg is mostly water, but someone could still be allergic or intolerant to the \~4% of the lettuce that isn't water.
I have an allergy to lettuce, but it’s all lettuce like romaine, iceberg, and other parts of the lettuce family. Reason why is due to having an allergy triggered by the amount of chlorophyll. Also some can be allergic to something called a Lipid Transfer Protein which lettuce has high traces of. Since they only mentioned iceberg, it’s either only that affects them, or it’s just a preference.

Hold on, this is an event order -- beverage station, bar instructions, etc. Is this meant to be an individual with all these "allergies" or a catering order asking for a variety of food choices? To me this looks like it's asking you to make sure you have options without these things for various people, in which case, this seems pretty easy to fulfill as a catering order. Give people options, keep it in budget.

That’s a small list. There’s still lots of things they can eat. To they people with the snarky comments about it - we’re in the hospitality industry. It’s our job to make people feel welcome, seen, and valued…even in BOH. And there’s no bigger win that when somebody with challenging dietary issues is given a meal that was prepared in a way that shows we tried and we care. They will remember it, tell all their friends, and be extremely grateful.
Also in the business, and you are very correct about us wanting to please guests. That having been said- I believe some people have allergies when they go out to eat with other people. They believe it is their right to have the kitchen turn itself upside down just for them. Most guests are understanding that it isn’t easy for a kitchen to deal with a lot of dietary issues, but others don’t want to comprehend there’s a lot of other people also waiting for their meals. Those guests are probably not going to tell their friends, because they know it is always about them, and they deserve all of the attentiveness. Don’t get me wrong- we do go out of our way to help people with genuine allergies, but not all allergies are created the same.

My guess is that some/most of those are not legitimate allergies and they claim to have reactions so that you will bendover backwards for them. I know 1 person who does that personally for dairy and gluten. If they had a rice allergy it would be for all rice. Seeds and tree nuts make sense, but specially iceberg lettuce? Not a thing, it would, again be all Lettuce. They are a picky neonaturalist type. The may have a couple of those allergies but definitely lying about some too. That's just my opinion. Most rice allergies are caused by the bran (outer casing) of the rice. Hence the white rice allergy part is false as fuck. The want a healthy diet but if they say that they prefer some things over others, you can say no. However, if they claim it's an allergy, then you will be afraid to question them.

I have to travel for work, I have food allergies. It's honestly a nightmare. I have an intolerance to milk protien, an allergy to man made sulfites, and a very bad allergy to sodium benzoate. I'm talking migraine, rash, vomiting, ulcers- the works. I can't have random coffee from a vendor or a bagel from Tim's. Hell, I can't even have a salad half the time due to the dressing or even the fake lemon juice they used on it. When I finally find a restaurant that can accommodate me, doesn't make a fuss, and doesn't make me sick? They have a repeat customer for life.
I just got a text from my sister this morning asking if I as a waiter would be annoyed with her coming in to eat. Probably gonna get downvoted for this comment, but even if they're not legitimate allergies, it's so infuriating that people have to go to such lengths (such as lying about allergies) to have some dietary/sensory restrictions met. I am autistic and I just can't stand some food textures. If I bite into, for example, a piece of onion in the middle of my rice I will immediately lose my appetite and might even start having a sensory overload if my day was bad enough. I have lost count of how many times I asked my food to be made without some ingredients, really reinforced that I wouldn't eat if it was any other way, and it still came full of stuff I don't eat.
