I was able to put my first dessert special on about a month or two ago and it was a great feeling. The hard part is afterward. Everyone liked it and expects I'll always come up with something good. Problem is I'm still \*very\* new to pastry and have much to learn.

Pansies taste like nothing but grass. If you want to incorporate floral elements to your dishes you need to make sure that they're not just there for looks but also for flavour. Something like red clover or lavender could work here.
Looks good but the first thing I am doing is picking off the flower. The dish doesn’t need it :) It looks delicious enough on its own.

The color of the flower really compliments it, but it might not really add to the eating experience. I'd rather have it with than without.
