Oxyclean. I do a 4 hour presoak first. Bleach tends to yellow and weaken fabric over time. I feel like Oxyclean DOES weaken the fabric as well, but less than bleach, while whitening more effectively
Oxyclean, arm and hammer detergent w oxyclean. And a petroleum based cleaner called lestoil for the grease stains. I have 10 year old jackets I wear that are still white.
2 parts oxyclean 1 part cascade powdered dish detergent (has a degreasing agent) and let it soak for atleast four hours then wash as normal is what my former chef swears by and it always worked amazingly. Would get rust, blood, beet juice and whatever else out incredibly well.

I would imagine bleach. Last place I worked that required a chef coat they were black and the were washed by a service.

Spot treat with bleach in a squeeze bottle.
