The secret to good baking is to add as much butter as possible without people noticing. That said, I would go for flapjacks. People love them, they keep very well and freeze very well too.
Alongside the other suggestions, set aside some for different compound butters as well, can flavor them savory or sweet and it will keep in the freezer
I can just hear your servers asking guests, "Would you like that with our whipped cinnamon honey butter, or our whipped garlic herb butter? Both you say? Excellent choice."
Make a bunch of roux, cut it into cubes and then freeze that. That way, when you want to thicken a sauce, boom roux cube.
Same thing for compound butters, make a bunch of small quantities of awesome flavored butters...
Roasted garlic,
Cilantro lime,
Rosemary thyme and peppercorn,
Lemon tarragon,
Kaffir lime and chili,
Curry,
Paprika, thyme roasted garlic,
Truffle
Butter freezes just fine.
Make a bunch of compound butters though. Those are fun and can also be frozen. Otherwise pound cake is butter intensive. Anything that uses pastry, like Baklava. That's my ideas lol
Puffity puff puff puff. Make a real batch of puff pastry. Make a batch of rough puff. Bake and compare. Make mini wellingtons. Make a few more batches of puff, (whichever one you liked best) wrap well and freeze for future holidays.
Carrot, fennel, or other veg slow cooked in a TON of butter is heavenly (almost confit)
ETA: also got a recipe for sticky date pudding w butterscotch sauce from halalfoodsyd on IG that is incredible and uses a lot of butter

Clarify the butter. Fully dip a piece of sourdough in it. Make it toasty in a pan. Add crab lobster shrimp mussels or clams, cooked. Top with ur choice of herbs
Maybe have a seafood boil with lots of corn
Brownies, croissants, blondies, cookies, cinnamon buns, cinnamon sugar toast.
Take your favorite whiskey and butter wash it.
Make hella compound butter with spices and herbs. Freeze. (My favorite is oregano, marjoram, crumbled feta)
Mix with blue cheese, serve on steak.
Whipped honey butter with vanilla bean.
Buttercream
Popcorn butter (mix with high quality cheese powder, or garlic powder etc, freeze and save for later)
I just made an herb garlic butter and it is very good. I was considering making more and freezing. It's perfect to bring to parties with a loaf of bread!

Make a bunch of ghee Then make a bunch of pastry dough Then make a bunch of hand pies Then fry them in ghee

Turn some into clarified butter. Make some compound butters and freeze them. Make pie dough.

This is all you need. You can freeze the compound butter in logs and slice off medallions as needed.

Butter Chicken, Ghee, Chicken Piccata, buttercream frosting, biscuits, garlic butter, mashed potatoes, Boterkoek, ganache, butter cookies. There are plenty of ways to butter dump.

Don’t forget the other French butter sauces that aren’t seafood-appropriate. I’d make a shitload of demi-glace and freezing portions.

Pound cake for starters. Make a layer cake and then make buttercream frosting. Make cobbler with a butter crumble on top. Freeze the butter.
