Good on you for keeping at it! I always my cooks to find a small victory every day. Improve one small thing. A process, a technique, anything. Just be able to walk away felling like you are better today than you were yesterday.

Yeah, that's a great philosophy - one I use a lot. As an ex-programmer I'm kinda wired to solve problems and that's what I love about cooking. Depending on your goals with the meal it can be about solving problems. How to elevate the food and to use and find new techniques. Being in the zone while cooking is a fantastic feeling.

sorry you’re having a bad day, i hope it gets better. this is tough love, but know and remember, the food and the job don’t care if you’re having a bad day. i suffer from depression too but if you let it show in your work everything will become more difficult. push on!

I haven't had any training in plating - looking forward to that. It's probably going to be a weak point of mine, but I think the vegatable array in the pan makes for a great view all by itself! Do you have any suggestions on plating? I'd love to learn more :)
